3 Quick and Easy Homemade Lasagna Recipe

Homemade Lasagna recipe or better-known as the layered pasta recipes is one of the more delicious Italian baked pasta dishes. Easy lasagne recipes consist basically of layers of pasta sheets, and a variety of sauces and fillings like vegetables, meat or fish. Like every other thing in Italy, the types of Lasagna as well as the feelings and preparation method varies from region to region.

In Emilia Romagna and Tuscany, Lasagna is made with "Sugo Alla Bolognese" and bïchamel sauce, plus an abundant grated Parmigiano before it goes into the oven; Ligurians make it with pesto sauce; Calabrians, use salted ricotta and Napolitans make the well-known lasagne with ricotta and a variety of other ingredients.

On top of that, pasta lovers and pasta fans around the world, have created their own and a great variety of original and vegetarian versions to adapt to personal tastes. This one is a variation of an easy Lasagna recipe, using stuffed pasta such as Tortelloni.


Serves: 3
Time: 15 minutes.


300g (10,5oz) Pack of Tortelloni or similar
75g (2 1/2oz) of finely grated Parmesan.
250g (8oz) of Mascarpone
400g (14oz) of can chopped tomatoes
Salt and pepper for season
Basil leaves for garnish.


Preheat the grill to high. Cook the Tortelloni or other stuffed pasta in a saucepan of boiling water according to the pack indications or for 3 minutes. Drain well and tip into a wide ovenproof dish.

Meanwhile, mix 20g of the finely grated Parmesan with a mascarpone and season with freshly ground black pepper. Pour a chopped tomatoes can over the pasta, tear over a handful fresh basil leaves and gently toss together.

Dot over the mascarpone mixture and scatter with 40g finely grated Parmesan. Pop under the hot grill for 3-4 minutes until bubbling and golden. Garnish with fresh basil Leaves and serve with a mixed salad.


This delicious recipe is ideal for a big family lunch, actually, it serves 8, If you prefer to make this Chicken spinach lasagne, keep it in the fridge so that it can serve many lunches during the week.

500 g (1 lb) of English spinach
1kg (2 lb) of chicken mince
1 clove of garlic, crushed
3 bacon rashers, chopped
425gr. (1 4 oz) can of crushed tomatoes
1/2 cup (125gr - 4 oz) of tomato paste (tomato puree, double concentrate)
1/2 cup (125ml - 1/4 fl oz) of tomato sauce
1/2 cup (125ml - 1/4 fl oz) of chicken stock
12 instant Lasagna sheets
1 cup (125gr - 4oz) of grated Cheddar cheese
And Cheese Sauce- Make it by yourself


Preheat the oven to moderate 180 degrees C (350 degrees F /Gas 4. Remove and discard the stalks from the spinach leaves. Plunge the leaves into a pan of boiling water for 2 minutes, or until tender. Remove, plunge immediately into a bowl of iced water and then drain.

Heat a little oil in a heavy-based frying pan. Add the mince, garlic, and bacon. Cook over medium heat for 5 minutes, or until browned. Stir in the tomato, tomato paste, sauce and stock and bring to the boil. Reduce the heat and simmer, partially covered, for 10 minutes, or until the sauce is slightly thickened. Season with salt and pepper to taste.

Prepare the Cheese Sauce to add to the recipe.

To assemble the lasagna, brush a deep, 3-liter ovenproof dish with melted butter or oil. Spread one-quarter of the chicken mixture over the base. Top with four sheets of lasagne. Spread with one-third of the cheese sauce, then another layer of the chicken fillings. Top with all of the spinach, a layer of lasagne, a layer of cheese sauce and the remaining chicken filling. Spread evenly with the remaining cheese sauce and sprinkle with the grated cheese. Bake for 50 minutes or until cooked through and golden brown.

240g packet of lasagne pasta sheets
1 cup (125g) of grated tasty cheese
250g mushrooms, sliced
1 small green pepper, chopped
2 x 125g of cabanossi sticks, sliced
1 1/2 cups (185g) of grated tasty cheese, extra
1/4 cup of grated fresh parmesan cheese
Homemade English Tomato sauce...Make it yourself.


Grease 25cm x 30cm Swiss roll pan Add pasta to the large pan of boiling water, boil uncovered until just tender, drain. Rinse pasta under cold water, drain
Place half the pasta over base of prepared pan, sprinkle with tasty cheese, top with remaining pasta Bake In moderate oven for 10 minutes
Spread pasta base with tomato sauce, top with mushrooms, pepper and cabanossi Sprinkle with extra tasty cheese and parmesan Bake In the moderately hot oven for about 40 minutes or until well browned.
